Manager Hygiene

About the role

The Hygiene Manager ensures that all food and beverage operations comply with Marriott International’s hygiene and food safety standards. This role provides training, conducts inspections, and advises on labeling to meet both brand and governmental requirements.

Key responsibilities

• Verify compliance with Brand Standard Audit (BSA) requirements across all operations.
• Monitor and coach food handlers on proper handling practices.
• Identify risk areas and implement pre‑emptive corrective actions.
• Ensure adherence to local food hygiene regulations, licensing conditions, and codes of practice.
• Provide technical advice on product labeling to satisfy government mandates.
• Deliver in‑house food hygiene training for new hires and trainees.
• Handle customer and regulatory inquiries related to food hygiene.
• Conduct daily kitchen inspections covering personnel, environment, and food hygiene, and develop corrective action plans.
• Perform regular vendor, internal BSA, and equipment inspections, coordinating remediation as needed.
• Manage cleaning programs, pest‑control liaison, and continuous improvement of hygiene standards.

Required profile

• High school diploma or GED with at least 2 years of experience in food & beverage, culinary or related fields, OR a 2‑year degree in Hotel & Restaurant Management, Hospitality, Business Administration, or a related discipline.
• Preferred education includes an Environmental Health or Culinary degree.
